Ingredients

Sesame Salmon

250 g salmon fillet (with or without skin)
1 tablespoon soy sauce
1 heaping tablespoon sesame seeds

Asian Salad

1/4 small red cabbage (about 120 g)
1 small carrot (about 50 g)
200 g soy pods (or 100 g edamame beans; frozen)
4 young green onions
salt

Ginger Vinaigrette

10 g ginger
3 tablespoons oil
1 tablespoon rice vinegar
1 tablespoon lime juice (or lemon)
1 teaspoon soy sauce (low sodium)
1/4 teaspoon sesame oil
1 level teaspoon sugar

How to prepare sesame salmon with ginger vinaigrette salad

  1. Cut the salmon into cubes and mix with soy sauce and sesame seeds. If the soy sauce is low sodium, you can also sprinkle a little salt. Place on a baking tray lined with parchment paper and bake at 200°C (400°F) for 8-10 minutes (top-bottom heat; if you have an extra browning program, use it).
  2. For the vinaigrette, blend all ingredients (I grated the ginger) in a small food processor or with an immersion blender.
  3. Blanch the soy pods in salted water according to package instructions. Quickly run under cold water to cool them, then remove the beans from the pods. Sprinkle the beans with a little salt.
  4. Cut the cabbage into thin strips and place in a wide bowl. Grate the carrot directly over the cabbage. Sprinkle with a little salt and knead until the cabbage loses volume and softens a bit. Pour 2 tablespoons of vinaigrette and mix well. Taste for salt.
  5. Add the green onions and soy beans to the bowl and pour another 2 tablespoons of vinaigrette on top. Mix only lightly and then transfer the salad to the serving bowl. Arrange the baked salmon cubes alongside.
