Spanish Garlic Soup
Quick Recipes Simple Recipes Budget Recipes Spanish Soups and Stews
I'm back! My cold is finally over. From now on, I'll make sure to prevent others with plenty of garlic and vitamin C. This soup, which I've known for a long time, seemed perfect. It's quick and cheap.
Ingredients
5 cloves garlic
1 liter chicken broth
50ml dry white wine (or dry sherry)
2 large slices stale bread (without crust)
1 heaping teaspoon sweet paprika
1 pinch ground cumin
2 eggs
2-3 tablespoons olive oil
salt
Servings: 2
How to prepare spanish garlic soup
- Heat the oil in a pot and add the sliced garlic. Over low heat, fry the garlic until it turns golden. Add the bread cut into cubes and fry for another minute.
- Remove the pot from heat and add the paprika, mix well. Add the wine, chicken broth, cumin and salt to taste.
- Simmer the soup over medium heat for 15 minutes.
- Turn the heat to low and crack the eggs into the soup. Let them cook until the eggs are done (firmer or softer, as you prefer).
* if you don't want whole eggs in the soup, you can beat them and pour them in a thin stream into the soup to make egg ribbons - Serve the soup in ceramic bowls, with one egg per serving, alongside toasted bread.
