Recipe: Roasted Garlic Paste

This paste is great on toasted bread or used in sauces or with pasta.

Ingredients

3 garlic heads
salt, pepper, thyme
a little oil
butter

How to prepare roasted garlic paste

  1. Peel the garlic but only the outer skin - don't peel the individual cloves, as you can see in the photo. Cut the top off each head so the inside of each clove is visible. Pour a teaspoon of olive oil on each head and massage the cloves so they're well coated.
  2. Wrap each head in aluminum foil and bake at 250°C for about 45 minutes. The inside should be golden.
  3. Squeeze out the cloves by pressing from the base of the head - they come out very easily this way.
  4. Put them in a bowl with salt, pepper and thyme to taste. Mash until you get a paste.
  5. Toast bread slices, spread a thin layer of butter, then a more generous layer of the garlic paste. For a smoother paste, you can add a teaspoon of butter or sour cream.
