Recipe: Stewed Peas

This week will be dedicated to fresh market ingredients. Today we have peas, tomorrow strawberries, the day after tarragon... then we return to strawberries... you'll see, it will be a full week.

Ingredients

300g fresh peas
1 onion
1/2 red bell pepper
4-6 sprigs dill
3 tablespoons quality olive oil
2 pinches pepper
1/2 teaspoon sweet paprika
salt

Servings: 2

How to prepare stewed peas

  1. Grate the onion and bell pepper on the large holes of a grater. Sauté in 2 tablespoons of hot oil for 2 minutes.
  2. Add the peas, seasonings (pepper, paprika and salt to taste) and chopped dill. Cover with 1 cup of water.
  3. Simmer everything over medium heat for about 20-25 minutes, until the water from the peas reduces to the consistency of a sauce.
  4. Add the remaining oil and adjust the salt.
