Recipe: Pea Soup

Vegan pea soup. It's ready before you can say "peas"!

Ingredients

400g peas (fresh or frozen)
1 onion
2 cloves garlic
1/2 bunch parsley
1 tablespoon sweet pepper paste
1 teaspoon sweet paprika
50ml tomato paste
1 bay leaf
2 slices bread (without crust)
1-2 sprigs dill
salt, pepper
2 tablespoons oil

Servings: 2-3

How to prepare pea soup

  1. Blend the onion, garlic, parsley, and pepper paste in a blender to make a paste. If you don't have a blender, chop them as finely as you can.
  2. Sauté the paste in hot oil for about 3 minutes. Add salt, 2 pinches of pepper, paprika, bay leaf, and peas, then add 2 and a half cups of water (enough to cover the peas). Pour in the tomato paste and finally break the bread into small pieces.
  3. Cook everything on medium heat for 20-25 minutes until the peas are done. When ready, sprinkle with very finely chopped dill. Taste for salt.
