Recipe: Tomato and Onion Salad

Yesterday I made a simple grilled bavette steak and while it was marinating (just with pul biber, a little cumin and a little oil) I prepared an equally simple salad with sweet cherry tomatoes and marinated red onion.

Ingredients

1 small red onion (about 50 g)
2 smaller tomatoes (or equivalent in cherry tomatoes)
1 lime (or 2-3 tablespoons lemon juice; from 1/2 small lemon)
2 tablespoons oil
a few sprigs of parsley
salt

How to prepare tomato and onion salad

  1. Slice the onion thinly. Separate the slices in a bowl and sprinkle with 1/2 teaspoon coarse salt. Mix well and let sit for 10-15 minutes.
  2. Squeeze the onion firmly in your fist until you squeeze out as much juice as possible. Taste the onion, if it's too salty you can rinse it in cold water and then squeeze again.
  3. Put the onion back in the bowl. Add the lime (or lemon) juice, mix and let sit for another 10-15 minutes.
  4. Add the oil and mix.
  5. Slice the tomatoes (cherry tomatoes in halves or quarters). Add them over the onion. Mix gently and let the salad sit until you serve it (minimum 15 minutes, maximum 30 minutes). The bowl should now be about half full with delicious juice.
  6. Before serving, add the chopped parsley. Adjust salt if needed.
