Broccoli and Cauliflower Salad

Among all those traditional pork dishes, a raw vegetable salad will surely find its place on the Christmas table.
Ingredients
100 g broccoli florets
100 g cauliflower florets
1 tablespoon chopped red onion
3 tablespoons grated parmesan (or cheddar)
1 heaping tablespoon sunflower seeds (roasted)
5 thin slices ham (or bacon; about 50 g)
Dressing
mayonnaise from one egg yolk (see recipe here)
1 tablespoon rice vinegar
1 tablespoon lemon juice
Servings: 2-4
How to prepare broccoli and cauliflower salad
- Cut the broccoli and cauliflower florets into small pieces. Mix with the finely chopped onion.
- For the dressing, prepare the mayonnaise according to the recipe here and when ready, season with vinegar and lemon juice. Pour the dressing over the vegetables and mix well. Only use enough mayonnaise to lightly bind the vegetables together, not more.
- Fry the ham slices in a pan without added fat until crispy. Tear into small pieces.
- Add the ham, seeds and parmesan over the salad. Season with a little ground black pepper. Mix well. Adjust salt only if needed (usually the parmesan, seeds and bacon are salty enough).
- It's good right away, but also after sitting. Can be stored in the refrigerator. The seeds and bacon will soften if you let it sit, but this won't affect the taste, only the texture. You can add these ingredients just before serving.
