The number one salad in Bulgarian preferences is called shopska and is almost identical to Greek salad, containing only vegetables and feta cheese. This salad, which is known to us as "Bulgarian salad", is actually the second most popular in Bulgaria and is called ovcharska. It additionally includes ham, boiled eggs and sometimes mushrooms.

Ingredients
1 large tomato
3 small cucumbers
1 bell pepper (I substituted with 3 tablespoons corn)
3 green onion stalks
a few parsley sprigs
200g ham (Prague-style)
feta cheese
2 hard-boiled eggs
3 tablespoons olive oil
1 tablespoon lemon juice (or vinegar)
salt, pepper
How to prepare bulgarian salad
- Cut the tomatoes, cucumbers, bell pepper, egg whites and ham into cubes. Cut the green onion into rounds. Finely chop the parsley. Put everything in a bowl.
* If you want to serve the salad immediately, the vegetables can be cut into small cubes, but if you'll serve it more than 15 minutes after preparation, cut the vegetables into larger pieces, otherwise they'll release too much juice. - Season the salad with salt and pepper to taste and toss gently.
- Mix the oil with the lemon juice until it forms an emulsion and pour over the salad.
- "Sieve" the egg yolks over the salad, meaning pass them through a fine sieve. Toss again. The yolk will combine with the dressing to form a creamy, delicious sauce.
- Distribute the salad into individual bowls.
- Grate plenty of feta cheese over each bowl like a dome, until the vegetables are no longer visible.
