Recipe: Cabbage Soup with Ground Meat

Quick, cheap, and satisfying soup. The flavor comes from the ground meat and the texture from the potatoes. This way you get a tasty soup in record time without needing to make a bone-based stock.

Ingredients

1 medium to small cabbage (about 800 g)
500 g ground meat (mixed beef+pork)
1 medium onion
1 large carrot
2 large potatoes
2 garlic cloves
1 level tablespoon sweet paprika
1 sprig dried thyme
1/2 teaspoon peppercorns
1 red hot pepper (or 1/4 teaspoon hot paprika)
3/4 teaspoon ground caraway
4 tablespoons oil
salt

How to prepare cabbage soup with ground meat

  1. Shred the cabbage finely and rub with 1 teaspoon of salt until it softens slightly.
  2. In hot oil, saute the finely chopped onion just until it softens a bit. Add the carrot grated on the large holes and continue sauteing until the carrot softens too (about 10 minutes), being careful not to brown the vegetables.
  3. Add the ground meat and fry over medium heat (stirring frequently to break it up) until it changes color throughout.
  4. Remove the pot from heat and add the paprika, caraway, peppercorns, crushed garlic, and hot pepper cut into a few large pieces. Mix everything well.
  5. Add the cabbage and stir again.
  6. Add 2 L of water, thyme, and some salt. Bring to a boil. Simmer over low heat, covered, for 10 minutes.
  7. Meanwhile, peel and cube the potatoes. Add to the soup and cook for another 20 minutes. After this time, check that both the cabbage and potatoes are cooked. Adjust salt to taste.
