Recipe: Chicken Salad with Avocado Dressing

The avocado dressing is totally worth it 😉

Ingredients

1/2 chicken breast (1 lobe)
1 bay leaf
1 celery stalk with leaves
5 lettuce leaves
1 small carrot
1/4 green bell pepper
1/4 red bell pepper
2 green onion stalks
5 parsley sprigs
salt

Dressing

1 avocado
1/2 very small onion
1 garlic clove
1 tablespoon lemon juice
2 tablespoons extra virgin olive oil
8 tablespoons water
salt

How to prepare chicken salad with avocado dressing

  1. Put the chicken breast to boil with water, bay leaf, celery leaf and a little salt. Boil for 40 minutes. After it cools down, shred it into strips.
  2. Cut the lettuce into strips. Place them on the bottom of a plate.
  3. Cut the carrots and peppers into matchsticks, and the green onion into rounds. Sprinkle over the salad. Add a little salt on top and drizzle with some olive oil.
  4. Mix the chicken strips with finely chopped parsley and salt to taste. Place the strips on top of the vegetables.
  5. Put the dressing ingredients in a blender and blend until smooth.
  6. Put a generous tablespoon of dressing over the chicken strips. Garnish with parsley leaves. Serve immediately.
