Recipe: Chocolate Cookies

Fantastic chocolate cookies, soft inside, like little cakes!

Ingredients

200g dark chocolate (50% cocoa I used)
30g butter
2 eggs
150g brown sugar
1 tablespoon rum (or coffee liqueur)
180g all-purpose flour
1/2 teaspoon baking powder
1 pinch salt

How to prepare chocolate cookies

  1. Sift the flour with the baking powder and salt.
  2. Melt the chocolate over steam and then add the cubed butter, stirring until it melts.
  3. Beat the eggs and sugar with a mixer until the sugar is dissolved (about 5 minutes).
  4. Pour the melted chocolate and rum into the egg mixture and mix just until incorporated. Add the flour and mix gently with a spatula until incorporated.
  5. Put the cookie mixture in a piping bag. Line the baking tray with parchment paper. Pipe small mounds about the diameter of a coin onto the paper, spaced apart from each other, as they will spread during baking.
  6. Bake the cookies at 170°C for 8-10 minutes (time depends on how much you piped for each cookie). At first you'll see the cookies puff up and become shiny and start to dry on top. Then they'll start to crack at the edges, on the bottom part. Finally they'll crack all over the surface. When you take them out, if you touch them with your finger on top you'll feel they're very soft inside and the cracked "skin" on top sticks to your finger. That's okay, don't bake them longer. They'll firm up after cooling.
