Recipe: Chocolate Pastry Cream

Saturday's vanilla cream can easily be transformed into a fine chocolate cream. Dark chocolate cream, milk chocolate cream, or white chocolate cream... you choose which one it'll be.

Ingredients

500ml milk
100g sugar
4 egg yolks
40g cornstarch
1 vanilla pod (optional)
200g chocolate (dark, milk, or white)
40g butter

How to prepare chocolate pastry cream

  1. Prepare the vanilla cream following the instructions here through step 7, but don't put the plastic wrap on yet. You can use vanilla or not, it's not required.
  2. Break the chocolate into pieces and melt it over a double boiler.
    * Use quality chocolate, your favorite chocolate.
  3. When completely melted, add the butter and stir until it melts too. Quickly pour the chocolate over the vanilla cream and stir vigorously until the mixture is smooth.
    ** I divided the vanilla cream into two equal parts and turned one into milk chocolate cream and the other into dark chocolate cream; so I used 100g of chocolate and 20g of butter for each part.
  4. Cover with plastic wrap, but make sure the wrap comes in direct contact with the cream. We do this to prevent a crust from forming on top.
  5. Store in the refrigerator.
