Chocolate Pastry Cream

Saturday's vanilla cream can easily be transformed into a fine chocolate cream. Dark chocolate cream, milk chocolate cream, or white chocolate cream... you choose which one it'll be.
Ingredients
500ml milk
100g sugar
4 egg yolks
40g cornstarch
1 vanilla pod (optional)
200g chocolate (dark, milk, or white)
40g butter
How to prepare chocolate pastry cream
- Prepare the vanilla cream following the instructions here through step 7, but don't put the plastic wrap on yet. You can use vanilla or not, it's not required.
- Break the chocolate into pieces and melt it over a double boiler.
* Use quality chocolate, your favorite chocolate. - When completely melted, add the butter and stir until it melts too. Quickly pour the chocolate over the vanilla cream and stir vigorously until the mixture is smooth.
** I divided the vanilla cream into two equal parts and turned one into milk chocolate cream and the other into dark chocolate cream; so I used 100g of chocolate and 20g of butter for each part. - Cover with plastic wrap, but make sure the wrap comes in direct contact with the cream. We do this to prevent a crust from forming on top.
- Store in the refrigerator.
