Recipe: Jam Sandwich Cookies

Good morning! How was your Christmas? I hope Santa was generous with you and you had a great time. I just rested (read: lazed around), rest interrupted only by a few small trips to the dentist. Cheerful and optimistic by nature as I am, I told my dentist to get ready, we'll spend New Year's Eve together too 😊

Today I can only serve you the last cookies I have left, because for the first time in my life I was so organized and efficient that I didn't throw anything away. It seems my new kitchen has a magical effect on me 😉

Ingredients

150g butter
50g sugar
1 egg
50g hazelnuts
25g almonds
210g all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 small jar jam (I used forest berry jam)
vanilla powdered sugar for decorating

Makes: 20 double cookies

How to prepare jam sandwich cookies

  1. Cream the butter well with the sugar. Add the egg and mix until homogeneous.
  2. Incorporate the ground hazelnuts and almonds.
  3. Add the flour previously mixed with cinnamon and baking powder.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. Remove the dough and let it warm up for 5 minutes, so it's easier to roll out.
  6. Sprinkle a little flour on your work surface (I put parchment paper on mine) and roll the dough into a thin sheet.
    * to make it easier to roll, divide the dough in two and roll out two sheets
  7. Cut out the dough in flower shapes (or other shapes). Cut out the center of half the flowers with a smaller cutter. Re-roll the dough scraps and cut out more... until you use all the dough.
  8. Place the whole cookies on a baking tray lined with parchment paper. Bake at 180°C for 10-12 minutes.
  9. Then place the remaining cut-out cookies on the tray and bake the same way. While they're still hot, dust the cut-out cookies with vanilla powdered sugar.
  10. Let all the cookies cool.
  11. Spread a teaspoon of jam on each whole cookie. Place a cut-out cookie on top, being careful not to touch the sugared part. Press gently so the two pieces stick together.
