Greek Yogurt Sauces and Salsa

Recipe: Tzatziki

A creamy and flavorful sauce like all Greek dishes.

Ingredients

1 long cucumber (or 3 small ones)
200g Greek yogurt (or sour cream)
2 garlic cloves (or more, to taste)
2-3 tablespoons quality olive oil
a few sprigs of dill
salt

How to prepare tzatziki

  1. Grate the cucumber, squeeze it very well with your fist to remove the water (or in cheesecloth) and mix with yogurt, crushed garlic, olive oil and chopped dill.
  2. Add salt to taste.
  3. It works well as a sauce for various dishes (for example chicken quesadilla or Greek quesadilla, alongside roasted cauliflower) and salads, or can be served simply on toasted bread.
