Garlic Sauce (Skorthalia)
Potatoes Vegetables Greek Sauces and Salsa
This is a Greek sauce called Skorthalia, it goes well with breaded dishes, grilled meat or vegetables... basically any dish that would be served with garlic sauce.
Ingredients
5 garlic cloves
2 potatoes (about 250 g)
50 ml olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
How to prepare garlic sauce (skorthalia)
- Boil the potatoes in their skins until a fork goes in easily. Peel them.
- In a bowl (or large mortar) crush the garlic cloves, add the salt and mash until the garlic softens. Slowly add 2-3 teaspoons of oil until the garlic becomes paste-like.
- Add the potatoes and continue to mash well. Also add 2 tablespoons of the hot water in which the potatoes boiled while mashing into a puree.
- Then slowly add oil while mixing the composition. The mixture should become like a fine mayonnaise (it needs to be thinner than regular mashed potatoes). Depending on the type of potatoes used, you'll use all the oil or less, so add it gradually.
- Taste for salt and add more if needed. Add pepper to taste, I use quite a lot, about 1/4 teaspoon for this quantity.
- Keeps in the refrigerator for about 3 days.
