Gribiche Sauce
French Eggs Grilling Recipes Sauces and Salsa
This sauce is very suitable for grilling. It goes especially well with grilled fish or any grilled chicken. You can also use it over boiled new potatoes.
Ingredients
1 egg
1 level tablespoon Dijon mustard
8 tablespoons olive oil
1 tablespoon lemon juice
6 parsley sprigs
2-3 dill sprigs (or tarragon)
1 green onion stalk
1 small pickled cucumber
1 level tablespoon capers
salt, pepper
How to prepare gribiche sauce
- Put the egg in cold water to boil and when the water starts boiling, leave it for about 3-4 minutes. The egg should be only half-cooked, with the yolk still soft. Crack the cooled egg and scoop out the inside with a teaspoon.
- Add the mustard and a pinch of salt over the egg and mix until the white breaks into small pieces.
- Add the oil in a thin stream, just like when making mayonnaise.
- Add the lemon juice.
- Finely chop the herbs, capers, and pickled cucumber and add them to the sauce.
- Season with pepper and check for salt.
