Recipe: Grilled Sardines with Green Salad

I took the cheapest but also the healthiest little fish and paired them with a refreshing salad. It's just a simple idea for a quick and healthy dinner.

Ingredients

8-10 canned sardines (in oil)
zest from 1/2 organic lemon
coarse salt

Salad

1 smaller head of lettuce (with flat leaves)
2-3 celery stalks
2-3 young green onions
juice from 1/2 organic lemon
1 tablespoon olive oil
salt

Servings: 2

How to prepare grilled sardines with green salad

  1. Cut the celery into thin slices. Cut the green onions into rounds. Add the lettuce leaves cut into strips. Sprinkle with a little salt and mix with your hand, gently kneading the salad. Add the lemon juice and oil and mix gently. Let it sit until the sardines are ready.
  2. Drain the sardines from oil. Heat a grill pan (or non-stick pan) for 5 minutes over high heat. Reduce heat to medium and place the sardines in the pan. Fry for about 4 minutes per side until golden and crispy. When flipping them, handle gently as canned sardines are fragile.
  3. Remove from the pan and drizzle with a little olive oil (I also added some chili oil) and grate lemon zest over them. Sprinkle with coarse sea salt.
  4. Serve the sardines with green salad and lemon slices.
