Grilled Sardines with Green Salad

I took the cheapest but also the healthiest little fish and paired them with a refreshing salad. It's just a simple idea for a quick and healthy dinner.
Ingredients
8-10 canned sardines (in oil)
zest from 1/2 organic lemon
coarse salt
Salad
1 smaller head of lettuce (with flat leaves)
2-3 celery stalks
2-3 young green onions
juice from 1/2 organic lemon
1 tablespoon olive oil
salt

How to prepare grilled sardines with green salad
- Cut the celery into thin slices. Cut the green onions into rounds. Add the lettuce leaves cut into strips. Sprinkle with a little salt and mix with your hand, gently kneading the salad. Add the lemon juice and oil and mix gently. Let it sit until the sardines are ready.
- Drain the sardines from oil. Heat a grill pan (or non-stick pan) for 5 minutes over high heat. Reduce heat to medium and place the sardines in the pan. Fry for about 4 minutes per side until golden and crispy. When flipping them, handle gently as canned sardines are fragile.
- Remove from the pan and drizzle with a little olive oil (I also added some chili oil) and grate lemon zest over them. Sprinkle with coarse sea salt.
- Serve the sardines with green salad and lemon slices.
