Recipe: Pan-Fried Sardines

Easy to cook, easy to eat: sardines in spicy sauce.

After tasting this sauce, you'll surely find other uses for it, not just for fish. It's far too good to limit to just one recipe.

Ingredients

250 g sardines (or anchovies)
50 g feta cheese
30 ml extra virgin olive oil
30 ml dry white wine
100 ml water
1 teaspoon mustard
2 tablespoons chopped parsley
1/4 teaspoon dried oregano
1 hot pepper (I used 1/2 red bell pepper + 1/2 green bell pepper for color)
1/4 lemon
pepper

How to prepare pan-fried sardines

  1. If the sardines are frozen, let them thaw in milk.
    Clean the sardines:
    - cut off the head
    - split along the belly
    - grab the spine from the head end and pull toward the tail, it will come off easily along with the intestines
    - rinse the fillets well and sprinkle with a little salt
  2. Whisk together the mustard and oil. Add the water and wine. Pour this mixture into a wide pan (about 25 cm) and bring to a boil. Crumble the feta into this sauce and sprinkle with a little ground pepper. Simmer the sauce for 2 minutes.
  3. Add the finely chopped parsley, oregano, and hot pepper sliced into rounds. Stir. Taste the sauce for salt (feta is quite salty).
  4. Remove the pan from heat and arrange the fish fillets nicely in the pan.
  5. Return the pan to heat and when it starts to boil, cover with a lid. Let it simmer covered for about 2-3 minutes (or until the fillets are cooked through, depending on their size). Remove the pan from heat, take off the lid, and squeeze a little lemon juice over the fillets.
  6. Serve with fresh bread.
