Recipe: Sardines in Cherry Tomato Sauce

Ingredients

1 small can of sardines in oil (120g)
200g cherry tomatoes
1 heaping teaspoon tomato paste
2 garlic cloves
1/2 teaspoon fennel seeds
2 teaspoons capers
1 heaping tablespoon finely chopped parsley
2 tablespoons lemon juice
2 tablespoons olive oil
salt, chili flakes

How to prepare sardines in cherry tomato sauce

  1. In a skillet about 25 cm in diameter that has a lid (or a shallow saucepan), heat the oil together with the tomato paste. Stir until the paste dissolves in the oil and starts to sizzle. Fry the paste for 1 minute.
  2. Add the cherry tomatoes cut in half, making sure most of them are cut side down. Sprinkle with salt and cover with the lid. Cook over medium-low heat for 2 minutes.
  3. Add the crushed garlic, fennel seeds crushed in a mortar, chili flakes to taste, and the chopped capers. Sauté, stirring a few times, for 1 minute.
  4. Add the sardines broken into a few pieces (remove the bones as you break them) and the chopped parsley. Stir briefly, add 4 tablespoons of water, a little more salt, and cover again with the lid. Let it simmer over medium-low heat for about 5 minutes. Shake the skillet back and forth twice during this time.
  5. At the end, taste the sauce for salt and add more if needed. Squeeze the lemon juice over the contents of the skillet. Serve immediately on toasted rustic bread.
