Recipe: Grilled Sardines

I had a productive weekend, with omega-3 and adrenaline. At the traditional May 1st barbecue, we had grilled sardines with gribiche sauce, and the next day, 3 minutes of adrenaline with Bogdan Marisca during a drifting session as part of the "2 percent for SMURD" program.

Ingredients

25 fresh sardines
4 tablespoons oil
1 tablespoon lemon juice
a little lemon zest
1/2 teaspoon dried oregano
3 crushed garlic cloves
sea salt, pepper

How to prepare grilled sardines

  1. Score the sardines on the belly and clean out the intestines. Rinse well under cold running water. Sprinkle generously with sea salt and pepper.
  2. Mix the oil with lemon juice until it becomes like an emulsion. Add the remaining ingredients and blend. Pour this marinade over the sardines and mix until well coated. Let marinate for at least 1 hour.
  3. On a hot grill greased with bacon fat, place the sardines and grill for about 5 minutes on each side, until the skin looks crispy.
  4. Serve warm with lemon juice, with garlic sauce, or with gribiche sauce.
