Grilled Zucchini with Cheese Cream

Two zucchini prepared simply on the grill, served with a cheese cream, was our dinner last night.
Ingredients
2 young zucchini
3 tablespoons neutral-tasting oil (e.g., sunflower oil)
salt, black pepper
Cheese Cream
100g Danish White cheese
2 green onions (white parts only)
2 tablespoons olive oil
1-2 dill stems
black pepper
Servings: 2-3
How to prepare grilled zucchini with cheese cream
- Cut the zucchini into slices about 0.5 cm thick. Sprinkle with salt on both sides and place on paper towels (10-15 minutes) to drain excess water.
- Heat a grill pan for 5 minutes. Keep the heat at maximum under the pan.
- Brush the zucchini slices with oil on both sides using a silicone brush.
- Place the zucchini on the hot grill pan and cook for 2-3 minutes on the first side (until light grill marks appear), then flip and cook for another 2 minutes on the other side. After this time, the zucchini should remain juicy and be cooked "al dente".
- Remove the zucchini slices to a plate and sprinkle with a little salt (taste to see if needed) and freshly ground black pepper.
- Put all the sauce ingredients together with 2-3 tablespoons of water in a food processor and blend until it becomes a paste.
- Serve the grilled zucchini alongside the cheese cream.
