Grilled Zucchini with Sheep Cheese and Mint

Ingredients
4 zucchini (as small as possible)
2 sprigs mint
1 generous slice aged sheep cheese (I used Horezu, produced by Five Continents)
coarse salt, ground black pepper

How to prepare grilled zucchini with sheep cheese and mint
- Choose small zucchini for grilling - the skin will be thin and won't need peeling, and the seeds will be few and small. Wash and dry the zucchini. Cut off the ends. Stand them upright (on one of the cuts) and slice lengthwise into approximately 1/2 cm thick slices. Or you can slice the zucchini using this mandoline, with the simple blade set to maximum opening. I got 4-5 slices from each zucchini.
- Brush the slices with oil on both sides.
- Heat a grill pan (without fat) for 5 minutes over high heat.
- Place zucchini slices in the pan and grill for 2.5 minutes on the first side and another 1.5 minutes on the second side. The slices will get appetizing grill marks.
- Remove the slices and arrange them side by side on a wide plate. Season with salt and black pepper. Grate the cheese on top (as much as you want, be generous). The grated cheese will melt and be amazing! Sprinkle with chopped mint leaves.
- Cover the plate with aluminum foil to keep warm until you make the next batch of zucchini. Place the next batch on top and repeat (seasonings, cheese, mint)... Make layers until you finish grilling all the zucchini.
- Grate any remaining cheese into a bowl. Serve the zucchini warm, with extra grated cheese on the side.
