Homemade Teriyaki Sauce

This Japanese sauce is used as a marinade for beef, chicken, shrimp, or calamari, which can then be roasted in the oven or, even better, grilled.
It's a sweeter sauce with a slight kick from the mustard. The basic version of the sauce contains only soy sauce, mirin, and sugar/honey. The name of the sauce is a combination of two Japanese words "teri" and "yaki." "Teri" means "gloss," and "yaki" means "grill," referring to the shiny glaze that forms on meat cooked on the grill when brushed with this sauce.
Ingredients
120 ml soy sauce
juice from 1 grapefruit (or from 2 oranges or 50 ml sake)
2 teaspoons honey
2 teaspoons sesame oil
1 level teaspoon ground ginger
1/2 teaspoon mustard powder (ground mustard seeds)
1 tablespoon sesame seeds
2 green onions, finely chopped
Yield: 220 ml sauce
