Italian Salad
Quick Recipes Cheese Vegetables Salads
I called it Italian salad because I used ingredients typical of this beloved cuisine.
Ingredients
100g arugula
10 cherry tomatoes
10 mini mozzarella balls
2 tablespoons capers (or olives)
4 tablespoons bacon, diced small
2 tablespoons pine nuts
Dressing
1 egg yolk (hard-boiled)
30ml olive oil
1/2 tablespoon white wine vinegar (or 1 tablespoon lemon juice)
salt, pepper

How to prepare italian salad
- Place the arugula in a bowl together with the capers/olives, and the tomatoes and mozzarella cut in half.
- Toast the pine nuts in a pan without any added fat until they turn golden. Shake the pan frequently. Remove from the pan onto a paper towel.
- Fry the bacon cubes in the same pan without any added fat over low heat until crispy. Remove and place over the pine nuts.
- Prepare the dressing by passing the egg yolk through a fine sieve and mixing it with the remaining ingredients. Taste and add more vinegar, salt or pepper as needed.
- Pour about 4 tablespoons of dressing over the salad. Mix well with your hands (this way the arugula leaves won't become soggy) until you see the arugula is evenly coated with dressing.
- Divide the salad between two plates. Sprinkle the bacon and pine nut "croutons" on top.
