Recipe: Marinated Cucumbers and Radishes

Greenhouse cucumbers from the south have arrived in Cluj - they're tasty and very tender. I used them over the weekend along with some young radishes to make a refreshing salad that goes well with baked salmon or pan-fried salmon.

Ingredients

3 fresh small cucumbers
3 red radishes
1 sprig dill
salt, black pepper

Marinade

3 tablespoons vinegar (I used rice vinegar because it's milder, but white wine vinegar works too)
6 tablespoons water
1 tablespoon oil
1 teaspoon sugar

How to prepare marinated cucumbers and radishes

  1. Slice the cucumbers and radishes thinly. You can use a mandoline slicer to get even slices - visually, it's worth the effort. Sprinkle with salt, mix, and let sit for 30 minutes to 1 hour.
  2. Drain the released liquid and then press between your palms (or in cheesecloth for larger quantities) to squeeze out as much juice as possible from the cucumber and radish slices. Place in a bowl and add the chopped dill and a little black pepper.
  3. Mix the water with the sugar until it dissolves. Add the remaining marinade ingredients and mix well. Pour over the vegetables.
  4. Let marinate for at least 1 hour. The salad should be consumed on the day it was prepared.
