Masala Chai
Let's enjoy this Indian tea together - it will warm us up on such a cold day!
Masala means spice blend, and chai means tea. By mixing "warming" spices (those that have a body-warming effect) and simmering them with equal parts water and milk, you get a spiced tea. All the spices are present in the tea, but cardamom is the most prominent.
Ingredients
1 cup water
1 cup whole milk (or soy milk)
2 heaping teaspoons black tea (green or white)
2 packets vanilla sugar (bourbon style)
Spice Blend
1 green cardamom pod
1/2 star anise
3 cloves
1 nutmeg
1 piece cinnamon stick (5 cm)
a few peppercorns
1/2 teaspoon ground ginger
Servings: 2
How to prepare masala chai
- Put the spices in a small dry pan (without fat) and toast until fragrant.
- Grind them briefly in a spice grinder or coffee grinder - just enough to crush them a bit, they don't need to become powder.
* If you prepare the spice blend in larger quantities, you can store it in a sealed jar and keep it for about a week. - Heat the milk in a pot. It doesn't need to boil, just get hot.
- Separately, bring the water to a boil, then add the ground spices. Lower the heat and simmer for 10 minutes.
- Add the tea leaves and let it simmer for another 2-3 minutes. Turn off the heat and add the hot milk.
- Put a packet of vanilla sugar in each of 2 cups and strain the tea into them. Serve hot.
