Recipe: Mock Chicken Soup

A fasting soup from the Salaj region. It imitates the color and taste of the most delicious soup made with free-range chicken, but it's prepared only from carrots and celery. In our region, this soup is served with homemade razalai instead of noodles.

Ingredients

3 carrots
150 g celery root
1 teaspoon peppercorns
3 tablespoons oil
100 g razalai (or egg-free noodles for the fasting version)
fresh parsley
salt

How to prepare mock chicken soup

  1. Grate 2 carrots on a fine grater. Heat the oil in a pot and sauté the carrots for 15 minutes over low heat. Stir them occasionally.
  2. Add 1.5 L of water over the sautéed carrots, along with the sliced celery, 1 teaspoon of salt, and the peppercorns. Simmer everything over medium heat for 30 minutes.
  3. In another pot, bring plenty of salted water to a boil and add the remaining carrot cut into rounds and the razalai. Cook for just over 10 minutes (check that the razalai are cooked).
    * if using store-bought noodles, check the cooking time on the package
  4. Strain the soup prepared with the grated carrots from step 2. This will be the base of our soup.
  5. Drain the razalai and carrot rounds. Add them to the soup base above. Also add about 3 tablespoons of the grated carrots to the soup (the rest of the grated carrots are not used in this recipe, but once cooled they can be mixed with yogurt). Adjust salt to taste.
  6. Serve with chopped fresh parsley.
