Recipe: Muffuletta

Muffuletta is a sandwich created by the Sicilian residents of New Orleans.

Ideally it should be made with soft bread (bun or focaccia). I used rye bread with seeds and it was quite hard to bite into because the crust is tougher.

Ingredients

2 round bread loaves about 15cm diameter (or larger sesame buns)
10 thin slices salami
10 thin slices mortadella
10 thin slices cheese

Olive Salad

150g olives (black and green)
150g pickled cauliflower
5 pickled hot peppers
1 roasted red pepper
1/2 teaspoon dried oregano
1/4 bunch parsley
2 pinches pepper
oil

How to prepare muffuletta

  1. Pit the olives and chop finely. Chop the rest of the salad ingredients finely as well and mix everything together. Add oil (I used a combination of sunflower oil and olive oil) until the salad is covered. Let it sit for at least a few hours to allow the flavors to combine.
    * can be stored in the refrigerator for about 7 days.
  2. Cut the bread loaves in half and hollow out the soft inside.
  3. Add plenty of the olive salad (well-drained of oil) to both halves of bread.
  4. Layer salami slices on one half of bread, then cheese slices, and finally the mortadella slices. Cover with the other half of bread.
  5. Wrap the sandwiches in plastic wrap, place a plate on top of each, and put a weight on top (for example a can) to press the sandwich well. Refrigerate for about 2 hours.
  6. Cut the bread in half and serve.
