Tuna Sandwich

This Tunisian-inspired sandwich was a hit last night. That was to be expected since it contains a potato salad similar to oriental salad, tuna, boiled eggs, and harissa sauce. If you wish, you can add green salad or a tomato and cucumber salad alongside.
Ingredients
700 g potatoes
1 small onion
3 small brined gherkins
9 tablespoons oil (olive or sunflower)
2-3 tablespoons lemon juice
2 cans of tuna (160 g each; in oil or water)
5 sprigs parsley
5 teaspoons harissa (or Hungarian hot pepper paste)
3 eggs
salt, pepper
baguette (or mini baguettes)
How to prepare tuna sandwich
- Boil the potatoes in their skins until a fork goes in easily. Then peel and cut into small cubes. Add the finely chopped onion and gherkins cut into cubes over them. Season with salt and pepper to taste.
- Mix the oil with lemon juice until it becomes an emulsion. Add 1 teaspoon of hot pepper paste (or harissa) and mix well. Pour this dressing over the potato salad.
- Hard boil the eggs in their shells. Peel and slice into rounds.
- Drain the liquid from the tuna. Then flake it with a fork and add the finely chopped parsley. Add salt if needed.
- Mix the remaining hot pepper paste with 1-2 tablespoons of water until it becomes slightly soft, like a sauce.
- Cut the mini baguettes lengthwise and scoop out the soft inside.
- Fill the mini baguettes with potato salad, add flaked tuna on top, then egg slices. Drizzle with hot pepper sauce as desired.
