Recipe: Warm Mozzarella and Prosciutto Sandwich

A bodega serving pizza and panini opened in our neighborhood. It actually opened a while ago, but it looked so sketchy that I never went in to see what they serve. But a friend recommended it and I thought I had to try their products. The pizza is really good, but the panini... they would be good, but they add store-bought mayonnaise and you can barely taste the cheese - it's in tiny quantities. So after two attempts to eat panini there and being disappointed each time, I made my own panini at home. It's no big deal, especially after I found a way to substitute the sandwich press with a simple grill pan 😉

Ingredients

2 slices rustic bread (or ciabatta)
2 slices prosciutto crudo
2 slices mozzarella
1 small dill cucumber
1 lettuce leaf
3-4 tomato slices
a little oil
salt, pepper

Serving: 1 sandwich

How to prepare warm mozzarella and prosciutto sandwich

  1. On one slice of bread, layer the prosciutto, then the lettuce, sliced dill cucumbers on top, and finally mozzarella slices. Sprinkle a little salt and pepper on the mozzarella.
  2. Cover with the other slice of bread and press the sandwich firmly with your hand. Brush the top slice with a little olive oil (I used aromatic oil from sun-dried tomatoes).
  3. Heat the grill pan (without oil) and place the sandwich in it with the oiled side down. Press the sandwich down with your hand for a few seconds. Let it grill until you see grill marks on the side being cooked (lift gently and check occasionally) and the mozzarella starts to melt. Brush the top slice with a little oil.
  4. Flip the sandwich and press it down in the pan again, this time using aluminum foil so you don't burn yourself. Let it grill on this side too.
  5. Remove the sandwich from the pan and insert the tomato slices.
  6. Serve immediately while the cheese is soft.
