Pasta with Pepper Sauce

In case you were craving a serving of good pasta, your wish is fulfilled.
Ingredients
250g short tubular pasta (I used pipe rigate)
2 cloves of garlic
2 tablespoons olive oil
1-2 handfuls baby spinach
black pepper
Pepper Sauce
2 roasted kapia peppers (or other red pepper; 150g weighed after roasting)
75g ricotta
30g grated parmesan (Parmigiano Reggiano)
1/4 teaspoon hot pepper paste
1 heaping teaspoon sweet pepper paste (or tomato paste)
zest from 1/4 organic lemon
1 generous pinch of grated nutmeg
4 tablespoons water
salt

How to prepare pasta with pepper sauce
- Put all ingredients for the sauce in a food processor (or blender jar) and blend until it becomes a fine and fairly thin cream.
* roast the peppers in the oven according to the instructions here; you can use frozen roasted peppers - Cook the pasta according to package instructions. Drain, but reserve about 100ml of the cooking water beforehand.
- In a large pan (about 28-30cm) heat the oil and add the crushed garlic. Sauté for 1 minute, just until fragrant, without browning. Add the pasta and mix well with the aromatic oil, grinding black pepper at this time.
- Add the pepper sauce and continue mixing until the pasta is evenly coated. If the sauce doesn't look very creamy but rather dense, gradually drizzle in some of the reserved pasta water until you have a creamy consistency.
- Remove the pan from heat and add the spinach. Stir, the spinach will cook gently from the heat of the pasta.
- Serve the pasta warm with extra grated parmesan mixed with freshly ground black pepper.
