If in Bologna the best refreshment (for the 40°C we experienced, it was truly needed!) was a large granita, in Korcula I discovered the most delicate and refined refreshing dessert: this (goat milk) frozen yogurt, flavored with roses and basil.
In a less touristy area, in the village of Pupnat, you can find konoba Mate, the most interesting restaurant on the island: they use local, organic products to create a refined menu that you wouldn't expect to find in such a place. And the atmosphere is unimaginable: it's like dining in your own backyard, surrounded by family. Calmness, relaxation, and joy seem to be the restaurant's motto. Their love for food was obvious and I was really impressed by the fact that in that place, where time seems to have stopped, there are such gastronomy enthusiasts who know Croatian cuisine well, but at the same time have the courage to complement it with reinterpreted, modern dishes, without losing touch with the island.
Ingredients
350ml full-fat yogurt
3 teaspoons rose jam/marmalade
8-10 basil leaves
1 teaspoon brown sugar

How to prepare frozen yogurt with roses and basil
- Strain the yogurt in cheesecloth folded in four. Allow it to drain in the refrigerator overnight.
- Mix the drained yogurt with the rose jam. Taste and decide if more sugar is needed. The yogurt should only be slightly sweet. I used homemade yogurt, which is less tangy than store-bought, so I only needed an extra teaspoon of brown sugar to make it sweet enough.
- Add the very finely chopped basil to the yogurt.
- Put the yogurt in a container with a lid, so that the yogurt layer is only 2cm deep (so it freezes faster).
- Put the yogurt in the freezer for 1 hour. Mix well. Repeat the mixing every hour for 5 hours.
- Serve in cups. If you leave it in the freezer overnight, the yogurt will harden: take it out 5 minutes before serving, then scrape it into flakes with a spoon and put it in cups.
