A beloved Italian recipe for which I used a "shortcut": Spanish tomato sauce I had already prepared. This way, the sauce was ready before the pasta was even cooked. In 15 minutes, dinner was ready.
But you can, of course, make this recipe even if you don't have already-made sauce. Start by frying a chopped onion over low heat, until golden (about 20 minutes). Then add prosciutto and fry it with the onion. Add 2 grated large, ripe tomatoes (or a can of tomatoes) and reduce them for 10 minutes. Add salt and pepper to taste and some sugar if the sauce is acidic. From here, continue with the recipe.
Ingredients
250g short, tubular pasta (I used penne)
1 cup of Spanish tomato sauce
50ml vodka
50g prosciutto (thin slices)
150ml sweet cream (for cooking)
2 tablespoons grated parmesan cheese
fresh parsley
salt
Servings: 2-3
How to prepare penne alla vodka
- Cook the pasta in plenty of salted water, according to the instructions on the package.
- While the pasta is cooking, fry the prosciutto broken into pieces in a pan, without adding any fat. When the prosciutto is crispy, add the tomato sauce and stir well. Bring to a boil.
- Add the vodka and cook for another minute, until it evaporates. Add the cream and cook for another 2 minutes.
- Remove from heat and add the finely chopped parsley and grated parmesan cheese. Stir well.
- Add the drained pasta and some pasta water, if you want your sauce to be more fluid. Stir until the pasta is covered in sauce. Taste for salt.
- Serve right away, with extra parmesan cheese sprinkled on top.
