Recipe: Quick Bean Stew

Quick and vegan, for days when we don't have time to prepare the original recipe.

Ingredients

2 cans beans (400g each)
1 bottle Heinz BBQ sauce (250ml)
1 onion
2 garlic cloves
2 bay leaves
2 thyme sprigs (or 1/2 teaspoon dried thyme)
1-2 tablespoons lemon juice
2 tablespoons oil
a few parsley sprigs
pepper, salt

How to prepare quick bean stew

  1. Saute the finely chopped onion in hot oil. When it has softened, add the crushed garlic. Saute for 1 more minute.
  2. Add the BBQ sauce and water (or beer, if not fasting) - fill the sauce bottle with water and add it. Add the bay leaves, thyme, a little pepper and lemon juice. Simmer over medium heat for 10-15 minutes.
  3. Add the drained beans (but not too well drained - leave a little liquid) and cook for another 5 minutes.
  4. Sprinkle with chopped parsley. Taste for salt.
