Recipe: Orange Butter Cookies

Ingredients

300g all-purpose flour
220g butter (at room temperature)
200g sugar
5 egg yolks
1 orange
1 teaspoon baking powder
1/2 teaspoon salt

How to prepare orange butter cookies

  1. Beat the butter, orange zest, and sugar with a mixer until most of the sugar is dissolved.
  2. Add the egg yolks (one at a time) and mix for another 1 minute after all are incorporated.
  3. Add the flour sifted with salt and baking powder and mix gently, this time with a spatula (or by hand) just until the flour is incorporated.
  4. Divide the dough in half and shape each into a log. Wrap in plastic wrap. Refrigerate the logs for at least 4 hours.
  5. Cut 1/2cm thick slices from the logs and place in muffin paper liners (to maintain their round shape during baking).
  6. Bake at 170°C for 12 minutes.
