Breton butter cookies à la Pierre Hermé fill the house with the aroma of Christmas.
Ingredients
300g all-purpose flour
220g butter (at room temperature)
200g sugar
5 egg yolks
1 orange
1 teaspoon baking powder
1/2 teaspoon salt
How to prepare orange butter cookies
- Beat the butter, orange zest, and sugar with a mixer until most of the sugar is dissolved.
- Add the egg yolks (one at a time) and mix for another 1 minute after all are incorporated.
- Add the flour sifted with salt and baking powder and mix gently, this time with a spatula (or by hand) just until the flour is incorporated.
- Divide the dough in half and shape each into a log. Wrap in plastic wrap. Refrigerate the logs for at least 4 hours.
- Cut 1/2cm thick slices from the logs and place in muffin paper liners (to maintain their round shape during baking).
- Bake at 170°C for 12 minutes.
