Recipe: Tomato Bread

Very simple, this Catalan appetizer (pa amb tomaquet), but all the more welcome when hunger strikes at the barbecue and the fire is too hot to put the meat on. But with bread there's no problem, you can toast it over high heat, just be careful as it cooks quickly.

Ingredients

3 slices of rustic bread
3 tomatoes (ripe and sweet)
1 garlic clove
3 teaspoons olive oil
sea salt

How to prepare tomato bread

  1. Toast the bread slices on a grill, in the oven, or in a toaster.
  2. Cut the tomatoes in half and grate them until you reach the skin.
  3. Rub the bread slices well with the garlic clove. Drizzle a little olive oil on each slice.
  4. Put the tomato pulp on each slice and sprinkle with sea salt.
    * if you don't have a grater handy, you can rub the tomato halves directly on the bread slices until the center absorbs the tomato juice; for this to work, the tomatoes need to be very ripe.
  5. Let them sit for a few minutes so the bread absorbs the tomato pulp and softens a bit. Serve plain or with thin slices of ham or sardine fillets on top.
