Recipe: Stuffed Bread

This recipe is ideal for preparing your work lunch for several days while also using up weekend leftovers from the fridge. I used what I had in my fridge when I made this, but you can add other ingredients to your liking (olives, peppers, canned corn or peas, etc.)

Ingredients

1 small baguette (250g)
200g grated cheese
200g ham (bacon or smoked chicken breast)
4 small pickled cucumbers
2 boiled eggs
2 heaping tablespoons sour cream (butter or cream cheese)
salt
pepper

How to prepare stuffed bread

  1. Cut the bread at one end and hollow out all the crumb.
  2. Crumble the bread crumb in a bowl to get small pieces. Add the rest of the ingredients cut into small cubes and the cheese crumbled or grated. Add sour cream, just enough to bind the mixture. Season with salt and pepper.
  3. Fill the bread with the mixture above, pressing down after each spoonful so no air pockets remain.
  4. Wrap in foil and refrigerate overnight.
  5. Slice and serve.
