Recipe: Walnut Cookies

I want to intrigue your taste buds with a new combination: walnut cookies and cherry plum jam.

Ingredients

110g butter (at room temperature)
50g powdered sugar
1 yolk from a large egg
1/2 teaspoon orange blossom water
100g all-purpose flour
20g cornstarch
50g ground walnuts
1/4 teaspoon baking powder

How to prepare walnut cookies

  1. Sift the flour together with the cornstarch and baking powder. Mix with the ground walnuts.
  2. Cream the butter and sugar with a mixer until smooth (2-3 minutes).
  3. Add the egg yolk and orange blossom water and mix until the yolk is incorporated.
  4. Add the flour and walnut mixture and stir with a spoon just until the flour is no longer visible. You'll get a paste-like dough.
  5. Shape balls from the dough and place them on a baking sheet lined with parchment paper. If desired, you can flatten them with the tines of a fork.
  6. Bake for 14 minutes at 180°C (if you made larger balls; you'll get around 15 pieces) or 10 minutes at 180°C (if you made small balls; you'll get around 25 pieces). The idea is that at the end the cookies should be slightly golden on the edges (see photo 3). When you take them out of the oven they're very soft and fragile, but that's okay, they'll firm up after cooling - don't be tempted to bake them longer. If baking multiple batches and you need to move them from the pan, use a thin spatula, otherwise you risk breaking them if you handle them by hand while warm.
  7. Let them cool, then they can be served plain, with milk, or with jam.
