Yogurt with Pistachio Granola and Baked Berries

This year I want food to have not only a purpose, but also taste.
This parfait is the winter version of yogurt with fruit and granola. I used berries frozen in summer when they were flavorful and aromatic, so I can use them now in a simple and nutritious breakfast. I added a small amount of sugar (syrup), just enough to bind the flavors together, making the recipe as healthy as possible and easy to incorporate into the daily routine.
Ingredients
4-5 Greek yogurts
Berries
450-500 g assorted berries (I used blackcurrants, redcurrants, raspberries, blackberries)
1 teaspoon vanilla paste
1 teaspoon maple syrup
1 tablespoon chia seeds
Granola
150 g small oat flakes
50 g pistachio butter
25 g pistachios
20 g maple syrup
20 g hemp seeds (or ground flax seeds)
1/2 teaspoon ground cinnamon
1 pinch of salt
Servings: 4-5

How to prepare yogurt with pistachio granola and baked berries
- In a heat-resistant dish approximately 30 cm long, place the frozen berries. Add the remaining ingredients and mix directly in the dish. Level the surface.
- In a bowl, mix the granola ingredients by hand, rubbing the mixture between your fingers so that the pistachio butter coats the entire mixture.
- Spread the granola in an even layer over the fruit.
- Bake at 180°C for approximately 45 minutes. During this time, the fruit will thaw and form a sauce underneath. The granola on top will become crispy.
- Remove the dish from the oven and stir a few times.
- To serve: in cappuccino cups or small bowls, create alternating layers of yogurt and warm granola with fruit (or at room temperature), with the last layer being granola with fruit. It's best and crispiest within the first few hours of preparation. After a few hours, the granola absorbs the fruit juice and will soften, but the mixture remains delicious.
