Avocado Salad with Smoked Salmon
Our lunch today. Very tasty and as I said... with a little bit of everything. This is a combination very dear to me, at least once a week I turn to it, especially for lunch. This is one of my definitions for "comfort food". You'll find serving suggestions at the end....
Ingredients
1/2 avocado
1 small white onion (about 30g)
1/2 tablespoon rice vinegar
1 tablespoon olive oil
50g smoked salmon
1 sprig dill
salt, black pepper
Servings: 2
How to prepare avocado salad with smoked salmon
- Dice the onion into small cubes. Sprinkle salt on it and let it sit for 5 minutes. Add the vinegar, mix well and let it sit for another 10 minutes.
- Add the avocado cut into cubes, chopped dill, freshly ground black pepper and the oil. Mix.
- Add the salmon cut into cubes or torn into pieces.
- Serve immediately. For lunch with sesame rice (100g / serving). For breakfast with a boiled egg (you can also add a few cherry tomatoes) or with a slice of dark bread with seeds.
