Tuna Avocado Salad

A delicious salad from Marnie that I prepared a week ago but didn't have space to post - traditional Christmas recipes took priority. Very simple to prepare and very presentable if you serve it in avocado shells.
Ingredients
1 can tuna (160g)
2 avocados
2 tablespoons grape seed oil
2 boiled eggs
1 small onion
a few sprigs of parsley
1 tablespoon lemon juice
salt, pepper

How to prepare tuna avocado salad
- Cut the avocado in half lengthwise and scoop out the flesh using this technique, keeping the shells intact.
- Drizzle the avocado flesh with lemon juice and mash with a fork until it becomes a paste. Then mix in the boiled egg yolks and oil (or oil from the tuna can). Add the tuna, also mashed with a fork, and mix everything well.
- Finally, add the onion, parsley, and egg whites, all very finely chopped. Season with salt and pepper to taste.
- Fill the avocado shells with the prepared salad and serve.
