Recipe: Baked Potatoes with Caramelized Onion, Arugula and Feta

When I realize that the arugula is sad in the fridge and has started to wilt from missing me, I have a few ways to save it. One is this: simply sauté it quickly with other ingredients and the sadness disappears 😉

Ingredients

4 potatoes (medium)
70g oven-baked onion
2 good handfuls of young arugula
50g feta cheese (sheep's milk)
2 tablespoons olive oil

How to prepare baked potatoes with caramelized onion, arugula and feta

  1. Wash the potatoes well. Bake in the oven at 180C (350F) until a fork goes in easily.
  2. Meanwhile, heat the oil and add the oven-caramelized onion. Add oregano, chili and black pepper now (in addition to what you added when you baked the onion), because the seasoning needs to be stronger to support the other ingredients.
  3. When the onion is hot, add the arugula in two batches, stirring often after each just until it loses its volume.
  4. Remove the pan from heat and add almost all the crumbled feta (save a little for garnish). Mix well, it will soften slightly from the heat and make the mixture creamy.
  5. When the potatoes are ready, cut them in half lengthwise and fill them with the onion mixture. Sprinkle the reserved feta on top. Serve immediately. Can be reheated (in oven or microwave).
