They're addictive! I set them next to me at the computer and before I knew it, I had eaten them all. I had to make another batch for Radu to try.
Ingredients
60g butter (80% fat; at room temperature)
60g powdered sugar (can be vanilla flavored)
1 egg white (at room temperature)
1 pinch of salt
60g flour

How to prepare cat tongue cookies (langues de chat)
- Beat the butter and powdered sugar with a mixer for 2 minutes. Add the egg white and mix for another 1 minute.
* If you didn't use vanilla powdered sugar, add a little vanilla extract; instead of vanilla you can add orange/lemon zest or other flavor extracts - Add the flour sifted with salt and gently incorporate using a spatula (I gently mixed with my hand, it's more comfortable and I can feel the dough better). The idea is not to overmix the dough. You'll get a very sticky batter.
- Put the batter in a bag with a corner cut off (about 5mm) (or use a pastry bag with a plain 5mm tip).
- Pipe the batter into strips about 7cm long, applying more batter at the ends (see photo 4).
- Bake at 200°C for 5-6 minutes, until the cookies are golden around the edges. Transfer them to a plate (they will still be soft and pliable, but will harden after cooling) and let them cool.
