Chicken with Almonds
I love the combination of meat with any kind of nuts (chicken with hazelnuts, chicken with cashews, chicken salad with nuts and oranges) and from time to time I look for new recipes like this. Yesterday I prepared a chicken with almond-based sauce that I served with couscous.
Ingredients
chicken meat (I used 3 drumsticks, 1 thigh and 3 wings)
150g almonds
1 slice of bread
3 garlic cloves
1/2 bunch parsley
1 teaspoon turmeric
1 onion
50ml dry white wine
200ml broth or water
6 tablespoons oil
salt, pepper

How to prepare chicken with almonds
- In a pan I heated 2 tablespoons of oil and added the almonds, the bread broken into small pieces and the roughly chopped garlic. I sautéed them until the garlic browned a little. Then I transferred them to the food processor, added the parsley, salt, pepper and turmeric and blended until the almonds were well ground.
- In the same pan I heated another 2 tablespoons of oil and sautéed the onion until softened. Then I added 50ml white wine and let it reduce. I put the stewed onion into a heatproof dish. Over the onion I poured half of the ground almond mixture.
- In the pan I heated the last 2 tablespoons of oil and browned the chicken on both sides, seasoning it with salt and pepper. I placed the chicken pieces in the baking dish over the onion with almonds and covered with the rest of the almond mixture. I poured the broth into the dish, covered with aluminum foil and baked at 200°C for 40 minutes. Then I removed the foil and left it for 10 more minutes.
