Recipe: Green Onion Flatbread

You do not need an oven to make this bread, it is cooked in a pan. It can be filled with many other goodies, but this time I took advantage of young green onions.

Ingredients

250 g all-purpose flour (BL 55)
75 ml boiling water
75 ml lukewarm water
5 g dry yeast
1 pinch sugar
1/2 teaspoon salt

Filling

2 green onion stalks
1/4 teaspoon sesame oil
salt

For decoration and brushing

1 tablespoon oil (for brushing the sheets and formed breads)
sesame seeds
1 tablespoon soy sauce
1/4 teaspoon sesame oil

How to prepare green onion flatbread

  1. Mix the flour with salt. Divide the flour in two (by eye, no need to weigh).
  2. In the lukewarm water, dissolve the yeast and sugar. Cover and leave in a warm place for 10-15 minutes, until it becomes foamy.
  3. Put half of the flour in a bowl and pour in the boiling water. Mix just until the flour is completely absorbed.
  4. Put the rest of the flour over the dough obtained and add the activated yeast. Mix until the flour is completely absorbed.
  5. Now you can knead the dough by hand until smooth and elastic (about 15-20 minutes) or in a stand mixer. Then put it to rise, covered, in a warm place for about 1 hour (until it doubles in volume). I prefer to put the dough in the bread machine on the kneading+rising program. You will get a slightly soft, slightly sticky dough.
  6. Cut only the green onion tails into thin slices. Add a little salt and sesame oil over them.
  7. Take the dough out on a generously floured work surface (the dough is a bit soft). Divide into two equal pieces.
    * the dough is divided into two because I used a 16 cm pan to bake them; if you have a larger pan of about 22-24 cm, make one bread
  8. Roll each piece into a thin sheet (not thin enough to see through, but thin), about 25 cm in diameter. Brush the sheet with oil. Sprinkle the onion slices.
  9. Roll the sheet into a log. Roll the log from one end like a snail. Flatten the snail with your hand and then roll it out with a rolling pin into a round sheet about 15 cm in diameter (or slightly smaller than the diameter of your pan).
  10. Brush the formed breads with oil on both sides. Sprinkle sesame seeds on both sides and press them lightly with your hand to stick to the bread.
  11. Heat a 16 cm pan and if it is not non-stick, lightly brush it with oil.
  12. Place one bread in it and turn the heat to medium-low. Put the lid on the pan. Bake the bread for about 5 minutes on the first side. Check that it is nicely browned underneath and only then flip it. Brush the bread on the browned side with a mixture of soy sauce and sesame oil. Lower the heat and bake the bread, covered with a lid, for another 10 minutes on the second side. If you think it is not browning enough, you can slightly increase the heat under the pan.
  13. When browned on the second side, take it out into a covered dish. Brush the second side with the soy sauce and oil mixture as well.
  14. Bake the second bread the same way. They are good warm or cold.
