Pasta with Yogurt and Spiced Meat
Short on time, big appetite? Ground meat is the saving solution! It cooks quickly and is super versatile. Here I cooked it quickly in a pan with spices and served it Lebanese style, over pasta with yogurt.
Ingredients
200g short pasta
150g Greek yogurt
Spiced Meat
250g ground beef (or lamb; or mixed)
1 medium onion
1 smaller red kapia pepper (or 1/2 green and 1/2 red)
3 large garlic cloves
1 heaping teaspoon pepper paste (or tomato)
1 teaspoon ground coriander
1 level teaspoon sweet paprika
1 teaspoon Lebanese 7-spice mix (or tagine spice mix)
2 tablespoons finely chopped parsley
5 large mint leaves
2 tablespoons olive oil
salt, black pepper

How to prepare pasta with yogurt and spiced meat
- Chop the onion and pepper into small cubes. Chop the herbs together. Set aside 2 teaspoons of herbs separately.
- Put the pasta to boil. While it boils, prepare the meat.
- In a larger pan, heat the oil and add the onion and pepper. Saute over low heat until they're very soft (at least 5 minutes).
- Add the crushed garlic and saute for another minute.
- Add the pepper paste and saute for 2 more minutes to caramelize slightly.
- Add the ground spices and stir. Add a little salt as well.
- Add the ground meat and with a spoon stir and press to break up the meat into pieces. After about 2 minutes, add 2 tablespoons of water (you can use pasta water) and the herbs, stir and cover. Simmer over low heat for 5 minutes.
- Drain the pasta and add it over the yogurt that's been well mixed with a little salt. Stir to coat evenly. Taste for salt.
- Divide the pasta into 2 bowls. Sprinkle half of the spiced meat over the pasta in each bowl. Sprinkle the reserved herbs on top. Serve immediately, they're better warm.
