Shrimp Skewers with Mango Sauce

Great on a sunny day. Perfect for a barbecue party. Spicy shrimp with a sweet and tangy sauce.
Ingredients
30 shrimp (650g unpeeled)
2 tablespoons Sriracha sauce
2 tablespoons olive oil
2 garlic cloves
1/2 teaspoon honey (or sugar)
5 sprigs parsley
salt, black pepper
Mango Sauce
1/2 large mango (ripe and fragrant)
1/2 lime
2 tablespoons olive oil
salt, black pepper

How to prepare shrimp skewers with mango sauce
- Clean the shrimp, rinse under running water, and dry well with paper towels.
- In a bowl, mix well the Sriracha sauce, crushed garlic, oil, and honey. Pour over the shrimp, add the chopped parsley, salt, and pepper. Mix everything well.
- Let the shrimp marinate for a few hours in the refrigerator, or 1 hour at room temperature if you're in a hurry.
- Just before preparing the shrimp, make the sauce: put the flesh of 1/2 mango, zest of 1/2 lime, juice of 1/2 lime (2 tablespoons juice), oil, a little salt, and black pepper in a food processor. Blend well until you have a smooth cream.
- Thread the shrimp, 5 on each skewer, as shown in photo 2.
- Heat the grill well (or a grill pan without adding any fat, 5 minutes over maximum heat). Place the skewers on the grill without crowding. Grill on both sides until nice grill marks appear (about 2 minutes per side).
* if you're using a grill pan instead of a classic grill, you can also fry the shrimp without skewers - just place them in the pan spaced apart from each other - Serve the hot shrimp with the mango sauce.
