Spinach Yogurt Dip

A light appetizer, similar to tzatziki. It can be served simply with pita, but it can also be served as a sauce alongside grilled meat or vegetables.
Ingredients
200g spinach
150g Greek yogurt
1 large garlic clove
1 tablespoon lemon juice
1 sprig dill
3 mint leaves
1 basil leaf
1 tablespoon oil
1 tablespoon extra virgin olive oil
salt, pepper

How to prepare spinach yogurt dip
- Heat the oil and saute the spinach, stirring quickly until it wilts. Sprinkle with salt.
- After it cools down a bit, squeeze the water from the spinach and chop it coarsely. Let it cool completely.
- Meanwhile, crush the garlic and cover with lemon juice. Chop the herbs.
- Pour the yogurt over the garlic, add the herbs and olive oil. Mix until smooth.
- Add the spinach and stir. Season with salt and pepper. Serve with Greek pita, flatbread, or fresh country bread.
