Cardamom and Orange Blossom Lassi

A very aromatic yogurt drink.
Ingredients
600g plain yogurt
1/4 teaspoon ground cardamom
1/2 teaspoon orange blossom water
4 tablespoons water (or milk)
Syrup
80ml water
50g sugar
1 pinch saffron (or turmeric; optional)

How to prepare cardamom and orange blossom lassi
- Put the water, sugar, and saffron in a small pot and leave on low heat until the sugar dissolves completely, then turn the heat to medium and simmer for 2 more minutes. Remove from heat and let it cool completely. Keep refrigerated until needed.
- Put the yogurt, syrup, cardamom (use less cardamom than specified if freshly ground), and orange blossom water in a blender. If using thicker yogurt, add the water/milk as well because the final lassi should have the consistency of drinking yogurt. Blend for 1 minute.
* If making small individual portions, use 200g yogurt, 3 tablespoons syrup, a generous knife tip of ground cardamom, a few drops of orange blossom water, and 2 tablespoons of water if the yogurt is thicker. - Divide into glasses and serve immediately.
