Recipe: Za'atar Roasted Potatoes

Oven roasted potatoes with sesame and za'atar. Extra crispy!

Ingredients

4 potatoes (starchy or medium starchy)
1 tablespoon sesame seeds
2-3 teaspoons za'atar
1/4 teaspoon pul biber (or chili flakes)
3 tablespoons oil
salt

How to prepare za'atar roasted potatoes

  1. Peel the potatoes and cut into 1.5-2 cm cubes. Boil in salted water. Cook only halfway, about 10 minutes, until a fork enters them but they still feel slightly firm.
  2. Drain the potatoes and shake the colander a few times to evaporate the water from them. Transfer to a bowl.
  3. Add the za'atar, chili, and a little salt (za'atar already contains some salt, so be careful not to add too much). Mix gently.
  4. Add the oil and sesame seeds and mix again.
  5. Place the potatoes on a baking tray and roast at 220°C for 20-25 minutes, stirring them twice during this time.
