Za'atar Roasted Potatoes
Ingredients
4 potatoes (starchy or medium starchy)
1 tablespoon sesame seeds
2-3 teaspoons za'atar
1/4 teaspoon pul biber (or chili flakes)
3 tablespoons oil
salt

How to prepare za'atar roasted potatoes
- Peel the potatoes and cut into 1.5-2 cm cubes. Boil in salted water. Cook only halfway, about 10 minutes, until a fork enters them but they still feel slightly firm.
- Drain the potatoes and shake the colander a few times to evaporate the water from them. Transfer to a bowl.
- Add the za'atar, chili, and a little salt (za'atar already contains some salt, so be careful not to add too much). Mix gently.
- Add the oil and sesame seeds and mix again.
- Place the potatoes on a baking tray and roast at 220°C for 20-25 minutes, stirring them twice during this time.
